We
brew a specialty line of beers for our friends and
regulars. We make small batches of limited quantity
beers throughout the year to reward our guests with
something special and unique. It gives us a chance
to experiment, explore and brew many different styles
of beer.

Barrel
Aged Slick Nick Winter Ale
We have
taken our classic Slick Nick Winter Ale and have racked
it into 7 year old bourbon barrels. It lived in these
barrels for 8 months. Slick Nick has been mellowed
by the whiskey! The vanilla and oak from the wood
are blended nicely with undertones of smoke and caramel
from the malt. Very limited offering at our new Scarborough
location only!

Local
Harvest Ale
This auburn autumn classic uses caramel malt, chocolate
and black malts. We have hopped this beer 4 ways. First
we mash hopped it with the locally grown hops from Pine
Point in Scarborough. The brewhouse had a wonderful
flower hop aroma steaming out of it. Secondly, we traditionally
hopped in the kettle with Amarillo, Cascade and Centennial
pellets. Finally it is both dry hopped and wet hopped
in a conditioning tank with whole leaf local hops from
South Portland and Scarborough.
Our Local Harvest Ale is mahogany in color and has an
intense bouquet of citrus, pine and lemongrass. After
your first sip you will taste the fresh wet hops and
the finish flavor of oily hops on your tongue. You will
desire yet another sip.

Barleywine
This beer is a blend of Old World influence and modern
technique. We used domestic malt and wheat and distinctly
American hops to produce this rich, full bodied ale and
then we fermented it with two different yeast strains.
On top of all this, we barrel-aged this beer in charred
oak bourbon barrels for over three months. The end result
is a dark ruby colored ale with very intense aromatics.

60L, 80L Roasted Barley, Belgium Special B

Scottish
Ale
Our Scottish Style Ale has a deep red burnished
copper color with a sweet malty caramel flavor. It is
medium in body and has a mild peat smoke aroma from
the light smoked malt we used in the mash

Whiskey
Porter
Our Midnight
Porter has been transformed into Whiskey Porter. We
have aged our Porter in fresh 7 year old whiskey barrels.
It has a beautiful Bourbon nose with vanilla, charred
oak and a dry chocolate finish! This luscious porter
has a ruby red hue with a solid tan head

Full
Throttle Double IPA - Now our Early Spring Late Winter
Seasonal!
Big
hoppiness and body. Hop heads will really enjoy the
Full Throttle. Caramel malts create a sweet and malty
flavor while giving the Double IPA a deep amber color.
The Simcoe hops give the Full Throttle its resinous
hoppy flavor of grapefruit and pine. Your palate will
be covered with hop oils balanced with caramely goodness.

Sebago
Smoked Ale - Hailing from Bamberg Germany,
smoked ales or Rauchbier acquire their distinct flavor
from drying the brewing malt over an open flame. The
wet malt takes on the flavor of the burning wood as
it dries. In modern brewing our malt is kiln dried
with indirect heat so the smoky flavor of the fire
is never imparted into the malt or beer. Our Smoked
Ale has a fiery orange and red color and a touch of
beech wood smoke in the nose and finish. We balance
the flavor with generous additions of traditional
German noble hops. It is unfiltered and delicious!

Mahogany
ESB (Extra Special Bitter) is an style English
ale. ESB was traditionally known as pale ale with
more hops and alcohol. Our ESB is a medium bodied
ale with a deep mahogany color. It is brewed with
American ingredients but with hop levels and malt
flavors typically found in an English ESB. Mahogany
ESB is named after the sleek varnishes of antique
wooden boats. It has a nice balance between sweetness
and bitterness making it a very quaffable beer.
